Ingredients
- 2 tbsps. olive oil
- 1 red onion, sliced
- 2 cloves garlic finely chopped/minced
- 1 red pepper deseeded and diced
- 1 yellow pepper deseeded and diced
- 1 840g can of fairway baked beans
- 1 tsp fairway assured smoked paprika
- 4 eggs
- Crispy chilli oil and fresh coriander to garnish
Method
- Fry the onion and the garlic for a minute or two in the oil on a low to medium heat until the garlic is fragrant (do not brown)
- Add the peppers and cook until soft, stirring at intervals
- Pour in the beans and the smoked paprika and bring to heat
- Make a small well for each egg and crack in
- Cover and cook for 3-4 mins checking regularly until the egg white is just set so the yolk is still runny
- Garnish with fresh coriander and crispy chilli oil and serve with toast or crusty bread
