Ingredients
This dish goes perfectly with Fairway Assured baked beans. You can prep the potatoes in advance so the dish only takes a few minutes.
- 250g block of halloumi cut into bite sized chunks
- 750g potatoes
- 1 onion diced
- 2 cloves garlic crushed
- 1 red pepper, deseeded and diced
- 2 tbsp olive oil
- 1 tsp fairway assured fennel seeds
- 1 tsp fairway assured dried thyme
- 1 tsp fairway assured smoked paprika
- Salt and pepper
- Fresh parsley or coriander and crispy chilli oil to garnish.
Method
Preparation
- Cut the potatoes into dice add to a baking tray with the chopped peppers, onion and garlic.
- Mix in half the oil, fennel, thyme and smoked paprika. Season with salt and pepper and bake in oven at 180ºc for 30-40 mins or until cooked through stirring half way through to ensure they’re cooked evenly.
- Set potatoes to side if using immediately or leave potatoes to cool and refrigerate until needed.
When ready to serve
- Fry the halloumi cubes on a medium to high heat in one tablespoon of oil until starting to brown.
- Add potato mixture and heat through
- While potato mix is heating through, poach egg and heat the Fairway Assured baked beans. Serve immediately with fresh parsley or coriander and crispy chilli oil on top.
