Cowboy Pie

Ingredients: Serves 6

  • 200g streaky bacon
  • 400g Sausages
  • 2 cloves garlic
  • 1 red pepper deseeded and diced
  • 1 yellow pepper deseeded and diced
  • 1 840g can of Fairway assured baked beans
  • A dash of Worcester sauce
  • Black pepper
  • Fresh parsley to garnish
  • Topping
  • 1kg Fairway Assured Mash
  • 130ml boiled water
  • 30g butter

Method

  1. Fry bacon and sausage in a pan until starting to brown
  2. Add garlic and pepper and fry until soft
  3. Add baked beans and a dash of Worcester sauce and season with pepper and transfer into a baking dish.
  4. Heat mash in microwave on high for 7 minutes, stir and put back in for one minute intervals until hot. Around 10-12 minutes depending on your microwave.
  5. Stir in 130ml of freshly boiled water
  6. Put mash on beans mixture in a baking dish, dot with butter and bake at 200ºC until golden and bubbling. Around 20 mins if from hot or 45-50 mins (at 180ºC  if from refrigerated)
