Halloumi hash

Ingredients

This dish goes perfectly with Fairway Assured baked beans. You can prep the potatoes in advance so the dish only takes a few minutes.

  • 250g block of halloumi cut into bite sized chunks
  • 750g potatoes
  • 1 onion diced
  • 2 cloves garlic crushed
  • 1 red pepper, deseeded and diced
  • 2 tbsp olive oil
  • 1 tsp fairway assured fennel seeds
  • 1 tsp fairway assured dried thyme
  • 1 tsp fairway assured smoked paprika
  • Salt and pepper
  • Fresh parsley or coriander and crispy chilli oil to garnish.

Method

Preparation

  1. Cut the potatoes into dice add to a baking tray with the chopped peppers, onion and garlic.
  2. Mix in half the oil, fennel, thyme and smoked paprika. Season with salt and pepper and bake in oven at 180ºc for 30-40 mins or until cooked through stirring half way through to ensure they’re cooked evenly.
  3. Set potatoes to side if using immediately or leave potatoes to cool and refrigerate until needed.

When ready to serve

  1. Fry the halloumi cubes on a medium to high heat in one tablespoon of oil until starting to brown.
  2. Add potato mixture and heat through
  3. While potato mix is heating through, poach egg and heat the Fairway Assured baked beans. Serve immediately with fresh parsley or coriander and crispy chilli oil on top.
