INGREDIENTS

  • Fairway Excellence Supercrispy Gourmet Chunky Chips
  • 1 Tbsp Cooking Oil
  • 2 Garlic Cloves
  • 3 Tbsp Tomato Ketchup
  • 1 Tbsp Mango Chutney
  • 1 Tsp Curry Powder
  • 1 Tsp Dried Fenugreek Leaves
  • 1/2 Tsp Garam Masala
  • 1/4 Tsp Ground Turmeric
  • 1 (75-100g) Medium Red Onion
  • 1 Medium Hot Red Chilli Pepper
  • 1 Medium (125g) Tomato
  • Handful of Fresh Coriander
  • Pinch of Chaat Masala
  • Coarse Sea Salt to Taste

METHOD

  1. Cook the chips using deep fat fryer, oven or air-fryer.
  2. Cut the red onion in half, peel it and then slice it into half-moon shapes.
  3. Peel and mince the garlic cloves.
  4. Deseed the chilli pepper and then dice.
  5. Deseed the tomato and cut it into a 3-4mm dice.
  6. Finely chop the fresh coriander.
  7. Combine the tomato ketchup, mango chutney with the curry powder, fenugreek leaves, garam masala and turmeric.
  8. 3 minutes before the chips are cooked heat a large wok or very wide-based pan over a medium-high heat and when it is hot add the oil.
  9. Throw in the garlic and stir fry for 30 seconds, then add the tomato ketchup mix and simmer for 2 minutes to cook out the spices.
  10. Add the cooked chips and toss to coat thoroughly.
  11. Finally add the shallot, chilli, tomato and coriander, toss to combine and serve sprinkled with chaat masala and coarse sea salt.
