Baked Beans Shakshuka

Ingredients

  • 2 tbsps. olive oil
  • 1 red onion, sliced
  • 2 cloves garlic finely chopped/minced
  • 1 red pepper deseeded and diced
  • 1 yellow pepper deseeded and diced
  • 1 840g can of fairway baked beans
  • 1 tsp fairway assured smoked paprika
  • 4 eggs
  • Crispy chilli oil and fresh coriander to garnish

Method

  1. Fry the onion and the garlic for a minute or two in the oil on a low to medium heat until the garlic is fragrant (do not brown)
  2. Add the peppers and cook until soft, stirring at intervals
  3. Pour in the beans and the smoked paprika and bring to heat
  4. Make a small well for each egg and crack in
  5. Cover and cook for 3-4 mins checking regularly until the egg white is just set so the yolk is still runny
  6. Garnish with fresh coriander and crispy chilli oil and serve with toast or crusty bread
